Miso slaw

1 Shredded carrot (approx 130g)
1 Shredded red pepper (approx 200g)
400g shredded cabbage, red or white (or both)
1 Shredded small red onion (approx 60g)
1 Pink Lady apple

4 tbsp miso
Juice of 1 large lemon
1 tbsp Soy Sauce
1/2 tsp chilli flake
1 garlic clove minced
1 cm ginger minced

Optional topping
3 spring onions
2 tbsp sesame seeds

1. Start by shredding all your veggies. There are a few ways you can do this 
* Using a box grater on the thick side for uniform shreds 
* Hand cutting for chunky slices
* Food processor with a shredder attachment for quick and easy shredding

2. Next make your dressing. I like to put all the ingredients it a jar so I can just shake it all together. Easy! 

3. Add all your shredded veggies to a big bowl and pour over your dressing. Toss well to make sure everything in coated in the dressing. To serve top with finely sliced spring onion and a sprinkle of sesame seeds.
