Aye Pickled

It all started with a passion for pickled and fermented foods – the tang, crunch, fizz and the sweet, sharp and sour flavours.

Everything is done by hand, using traditional techniques, but you'll find their award-winning range vibrant, bold and innovative.

French-born Marie-Anne soon realised after turning vegan that none of the cheese options available suited her so she turned to making her own cheese. She was looking for recipes that would create a great taste reminiscent of the traditional cheeses she grew up with, but also result in a perfect mouth feel. The intention was to eat the cheese on its own as well as also using them in cooking and melting.

Having all been furloughed during the covid-19 outbreak Will, Pete and Ricky decided to use their years of experience cooking and working in hospitality to turn a hobby into business. Each bottle of Leithal Hot sauce is handmade using different chillies and fruits, vegetables and fermentation to create tasty and innovative flavour combinations.
