Smashed cucumber noodle salad
Ingredients
60g sugar snap peas cut in half
60g green beans halved
80g cherry tomatoes, halved
1 little gem lettuce shredded
1/2 cucumber smashed (approx 189g)
2 spring onions, finely sliced
150g soba noodles
Dressing
2 tbsp Miso
2 tbsp Apple cider vinegar
1/2 tbsp Soy sauce
4 tbsp sesame oil
Topping
50g Salted Peanuts
Method
1. Start by cooking the noodles in boiling water for 4 minutes. After the first 2 minutes add in the snap peas and green beans and cook for the remaining 2 minutes. Drain the noodles and vegetables and refresh in cold water until they are cool.
2. Next prep the remaining ingredients, halve the tomatoes, shred the lettuce, and slice the spring onions. Now for the fun bit... smashing the cucumber. Pop the cucumber in a bag and gently (but firmly) smash it with a rolling pin. You want chunky uneven pieces of juicy cucumber so it will soak up the dressing.
3. Speaking of dressing. Add all the ingredients to a jar and shake well to combine.
4. In a big bowl combine the chilled noodles and beans, your chopped veggies, smashed cucumber and dressing. Toss well so everything is coated in the dressing. Serve topped with roughly chopped salted peanuts.
