Vegan Lemon Curd
Ingredients:

1 cup fresh lemon juice

1 tbsp lemon zest

1 cup granulated sugar

1/2 cup vegan butter, melted

1/4 cup cornstarch

1/4 tsp salt
Instructions:

In a medium saucepan, whisk together the lemon juice, lemon zest, and sugar until well combined.

Add the melted vegan butter and whisk until smooth.

In a separate bowl, mix together the cornstarch and salt until combined.

Gradually whisk the cornstarch mixture into the lemon mixture until smooth.

Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and starts to boil, about 5-7 minutes.

Reduce the heat to low and continue to cook, whisking constantly, for an additional 2-3 minutes.

Remove the saucepan from the heat and let the lemon curd cool for a few minutes before transferring it to a glass jar.

Cover the jar with a lid and refrigerate the lemon curd for at least 1 hour or until it's completely chilled and set.
